Commercial Kitchen Cleaning: The Half Most Quotes Leave Out
Commercial kitchen cleaning is really two separate jobs done by two different trades. A kitchen deep clean covers the surfaces you can see — floors, walls, ovens, fryers, shelving and cold rooms — and is driven by your food hygiene rating. Extract cleaning covers the canopy, grease filters, ductwork and extract fan that carry grease-laden air out of the building, and is driven by fire safety and your insurance policy. A deep clean never opens the ductwork, so it cannot satisfy an insurer asking for evidence that the extraction system has been cleaned. BlueTick does the extract half, to the BESA TR19 Grease standard, and issues a certificate recording grease depth in microns before and after. BESA sets the cleaning interval by cooking hours per day: every 3 months for heavy use at 12–16 hours, every 6 months for moderate use at 6–12 hours, every 12 months for light use at 2–6 hours.
